For the most part, I use my microwave to heat things up or defrost frozen food. However, there are a few things I cook in my over-the-range microwave. I find it faster to make these things this way then in the oven.
1. Spaghetti Squash and Butternut Squash
I love to eat spaghetti squash and butternut squash. The problem is, these types of squash can take up to an hour to cook in the oven. Since I rarely make anything that takes that long to prepare, it requires me to really plan ahead to have these squash for dinner. That is why I was so thankful when my friend told me she cooked them in the microwave.
In order to cook one of these in the microwave you will need to:
- Cut squash in half
- Remove seeds
- Place cut side down in a microwave safe dish
- Add about an inch of water to the dish
- Microwave for 10-12 minutes or until tender
I’m not able to cook more than one side at a time, because I don’t have a dish that will fit in the microwave that fits both. Either way, if I cook both sides, it still cuts the cooking time in half.
2. Macaroni and Cheese
I’ve been making homemade Mac and Cheese since I was a teenager. I make up my own cheese sauce from butter, flour, milk, and Velveeta cheese. I use the microwave to heat up these ingredients, and then add the cooked noodles to the sauce. Typically, I cook it for another 4-5 minutes in the microwave afterwards to make sure everything is hot.

3. Baked Beans
Baked beans is another recipe that I find easiest to make in the microwave. This cuts down on the cooking time by half. Typically, I can make baked beans in about 20 minutes this way instead of close to an hour in the oven.
Here’s how I make baked beans:
- 3 cups pinto beans, black beans, or kidney beans, drained and rinsed
- 1 cup ketchup
- ¼ cup brown sugar
- ¼ cup molasses or maple syrup
- 2 tablespoons mustard
- 2 slices bacon
- ½ an onion chopped
- ½ a bell pepper chopped
Put beans, ketchup, mustard, brown sugar, and molasses or maple syrup into a microwave safe dish. Mix ingredients up. Use scissors to cut the bacon up into smaller pieces and lay on top of the beans. Add onion and bell peppers to the top of the beans as well.
*do not mix in the bacon and vegetables until the end. Allow them to cook on top.
Microwave the beans for 12-15 minutes or until hot.
