Austin and I have been counting our calories for the last few months to take off a few extra pounds we’ve put on. For that reason, I’m always on the lookout for recipes that are healthy and low calorie. Eating extra vegetables is the way to keep your calorie intake down.
We both really enjoy eating mashed potatoes, but I don’t have to say how many calories are in that. This recipe has been a great thing for us to eat something similar to mashed potatoes without the calories.
Mashed Cauliflower Recipe
1 head of cauliflower
1/2 cup water
5 chicken bullion cubes
1/2 plain Greek yogurt
1 cup shredded cheddar cheese
green onions to taste
How to Make the Recipe
First, you will need to boil the head of cauliflower.
After the cauliflower is tender, you will drain it completely. Stab it with a fork to see if it is tender, just like you would with potatoes.
Put the 5 chicken bullion cubes in a 1/2 cup of water. Microwave the water for 2-3 minutes or until the cubes are dissolved. Stir until cubes are fully mixed.
Mash the cauliflower and add the chicken stock.
After you mash up the cauliflower and liquid, add the plain Greek yogurt or sour cream if you prefer.
When you have finished mixing in the yogurt or cream cheese, then sprinkle the top with cheddar cheese. You can add chives at this point if you would like. Or sprinkle on afterward.
Bake in the over at 350 degrees for about 20-25 minutes or until hot.
This has been a perfect addition to our meals at night. We have really enjoyed our mashed cauliflower.
